Chef Pierre in the early 80’s was considered one of the greatest chefs in Palm Beach County Florida. He began curing and smoking salmon with his very own unique style in the kitchen of acclaimed restaurant Café Du Parc. The locals fell in love with the salmon and soon the demand for Pierre’s delicacy grew. Regional chefs, restaurants and clubs caught onto this exceptional product and Pierre’s Specialty Foods was born. Pierre’s operation quickly outgrew its original humble location and has moved to Lake Park, Florida where the tradition of making Pierre’s famous artisanal smoked salmon has continued.
Over the years Pierre’s Specialty Foods has upheld their process curing and smoking each batch by hand in small quantities to ensure the best flavor and consistency possible. The curing and smoking process is slow and labor intensive but through this labor comes the sweet, smoky flavor and quality which has not changed since the beginning of Chef Pierre’s creation.
We take pride in continuing the tradition of making smoked salmon the way Pierre did. Which is why today we call some of the best restaurants, country clubs and cafés in Palm Beach and Broward County our customers.
